Crock Pot Italian Sausage and Peppers

When the holidays get crazy.  When you have football on the TV.  When you’re busy out having adventures…this recipe is a go-to recipe I choose.  Hot, hardy and delicious with minimum effort required!!  I love Italian food and being gluten free, this is one I can enjoy as long as I’m careful with the ingredients I pick.  Yumm!!!

A great, hardy recipe that can be used for a sandwich filling or served over pasta for a delicious dinner. Using the crock pot, allows you to come home from your daily list of To-Do's to a hot meal.
Recipe type: Entree
Cuisine: Italian
Serves: 4 servings
  • 1 LB. sausage (I use GF turkey sausage)
  • 1 C onion, sliced
  • 1 green bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 C zucchini, cut into rounds
  • 1 (15 oz.) can diced tomatoes
  • 2 TBSP. brown sugar
  • 1 TBSP. balsamic vinegar
  • 4 bay leaves
  • 1 tsp. Italian seasonings (basil, oregano, parsley, rosemary)
  • salt and pepper, to taste
  • grated Parmesan cheese as garnish (fresh is best)
  1. Cut sausages into 2" pieces and place into crockpot
  2. Add fresh veggies on top.
  3. Add diced tomatoes on top.
  4. Mix ground spices with vinegar and sugar and pour on top.
  5. Tuck bay leaves around sides.
  6. Add salt and pepper, to taste.
  7. Turn Crock pot onto low heat. Cook 8-10 hours.
  8. When done, remove bay leaves, then serve over pasta or into sandwich rolls.
  9. Shave Parmesan cheese on top to garnish, to taste.
