A perfect breakfast for non-breakfast people, a great coffee substitute or an afternoon energy booster. It's also a nice option on those days when you need a reset from over-indulging the night before. Feel free to use whatever vegetables you want or have on hand. My sister loves to add Bok Choy. Change for seasonal availability.
Recipe type: Beverage or Meal Substitute
Serves: 1-2 servings
  • 1-3 Kale leaves or a handful of spinach leaves or other lettuce
  • 3-4 stalks of celery
  • ½ cucumber
  • 1 apple or 1 carrot (I use 6-8 baby carrots)
  • ¼ lemon (optional for extra sweetness)
  • 1 small piece of ginger root (optional for a little kick of flavor)
  1. Add Celery, cucumber, apple or carrots, lemon and ginger root one at a time into juicer and juice them.
  2. Place this into a blender and add kale leaves (or lettuce of choice) and equal amounts of water to juice.
  3. Blend till smooth.
  4. Use more or less water, to taste. Beginners may want more to start.
  5. Enjoy!
